Recipe: Chilli Garlic Oil

This recipe is adapted from Liz Miu via ABC Everyday.

Ingredients

8 cloves of garlic
2 slices of ginger
1 cup of olive oil
1/4 cup of chilli flakes
2 tbsp of sesame seeds
1/2 tsp salt
1 tsp of honey
2 star anise
2 bay leaves
1/2 tsp of Chinese five spice
2 cinnamon sticks

Method

Into your heat proof jar or bowl, add the chilli flakes, sesame seeds, salt, honey, star anise, bay leaves, Chinese five spice and cinnamon sticks and set aside.

Slice the cloves of garlic into small slithers, the smaller they are the crispier they will be.

Add the sliced garlic and olive oil to a pot and gently simmer over the stove. Be sure to watch and stir as this heats as the garlic can burn easily. Once the garlic has started to turn golden and is crispy, strain the oil from the garlic, and set the garlic aside.

Add the oil back onto the stove with the sliced ginger for 5 minutes.

Remove the ginger and pour the oil over your prepared spice mix.

Once the oil has cooled, fish out the cinnamon sticks, bay leaves and star anise and add in the crispy garlic.

Stir well and enjoy.
